This week we suggest celebrating the arrival of warmer weather, thanking the kind weather gods by offering a spring celebration salad. Head to the West Seattle Farmers market and pick up all the ingredients you desire; while there, why not throw in a few things you may never have tried before, like the oft-overlooked sunchoke? Otherwise known as the Jerusalem artichoke (though it is neither from Jerusalem nor an artichoke), this sunflower relative has a potato-like consistency with a nutty sunflower-seed undertone, and is one of the few tubers native to North America. Choose ones that are moist and smooth, not dry and wrinkly, and chop them up for a crunchy addition to your salad. Throw in some onions and carrots or whatever fresh produce strikes your fancy, pour a glass of that organic wine you picked up, and revel in the fact that it may soon be time to move your heavy winter coat to the back of the closet.
