“The Daily Drink” brings you a must-try libation from our booze columnist Zach Geballe.

As mentioned in Monday’s Daily Drink, it’s definitely gin season. To celebrate, I’ve been drinking quite a few gin cocktails, including the creatively-named “Fancy Gin Cocktail” at Stoneburner in Ballard. A combination of barrel-aged Big Gin, orange Curacao, absinthe, and Peruvian bitters (and to be honest, I have no idea what those are). The drink pops with an initial bit of sweetness from the Curacao, but the smoky notes of the barrel-aging and the bitterness of the absinthe give it a real clean, dry finish. It definitely goes well with a warm spring day.
