How brilliant is that?On the eve of National Grilled Cheese Day (April 12), Beecher’s is hosting the goddess of Grilled Cheese, Laura Werlin. She’s signing copies of her lastest book Grilled Cheese, Please! at 2 p.m. Monday at the Beecher’s store at Pike Place Market. (Not to be confused with the Beecher’s store in Manhattan! Which is opening this summer. How cool is that?) On Sunday, I went to a grilled-cheese demo by the author at my friend Myra’s house (Myra’s also known as Viv from Seattle Bon Vivant), and I was completely blown away by some serious grilled-cheese magic. You really should buy Laura’s awesome book, which includes 50 recipes, but I’m going to give you a small taste of what makes it so brilliant: To make one of the out-of-this-world sandwiches in Grilled Cheese, Laura smeared a cheddar butter on the outside of the bread. It toasted up so golden and crispy, and because there was also cheese inside, it was truly a monument to over-the-top cheesy goodness.While we’re on the subject: Who makes the best grilled cheese sandwich in Seattle?
