His last day of service will be June 2.Twenty-one years (that’s an age of 137 in restaurant years) is time enough to see the Seattle restaurant scene through some dramatic changes: the explosion of the sustainable food movement, the rise and fall of balsamic vinegar, the advent of the $10 martini. I can’t imagine how many covers Manley has served in 21 years, nor how exhausted he must be after subjecting his body to a restaurateur’s schedule for two decades.
