Il Corvo’s Mike Easton is toying with the idea of someday opening a bar, but to sample his spirits handiwork, drinkers will either have to wait for his five-year old daughter to grow up or buy tickets to Seattle Weekly’s Voracious Tasting.
Since he couldn’t serve pasta without shutting down his restaurant’s busy lunch service on Voracious Tasting day, Easton will be pouring cocktails at the Paramount Theater on Apr. 4. Although he hasn’t yet decided on a recipe, he hints that he “loves bitters and housemade vermouth.”
“I do have a batch of wine and some knowledge,” he says.
Alcohol choices at Il Corvo are limited to wine, since the Pioneer Square nook doesn’t have adequate storage space for beer. But as Easton’s Twitter followers know, the noodle maven enjoys making and drinking cocktails.
“I think if I wasn’t a chef, I’d be a bartender,” Easton says. “It scratches the same itch, being creative and keeping people happy.”
Easton says he’s considering “opening a bar once this place really gets settled in,” although finding the right venue could speed up the timeline.
“As my daughter gets older, it will be a more real venture,” he says.
