We wrote about him when he started his 20-potato-a-day diet and when he was around the half-way mark. We speculated on whether or not he was going to go crazy from eating nothing but potatoes for 60 days (assuming that, obviously, he would–mostly because we knew we would if our places were reversed). And then, when he didn’t–when he didn’t lose his marbles, didn’t get caught on a security camera breaking into a Taco Bell in the middle of the night and gorging himself on chalupas, didn’t wind up on a roof somewhere, naked, wearing only a Mexican wrestler’s mask and hurling potatoes down onto the commuters below–we were secretly a little bit disappointed, but also very proud that he’d accomplished his goal.And while our congratulations were probably nice and all, you know what’s better than that? Getting to talk with Matt Lauer on the Today show and getting his congratulations just because you managed to stick to a diet for two months.Yeah, we have the video. Matter of fact, it’s possible that I already have done that and just never noticed…
