Biang! (their exclamation point) might be my current pick for top dining destination in the area, largely due to one dish: the Hot Oil Seared Biang Biang noodles. You can get them topped with spicy cumin beef, chopped pork sauce, pulled stewed pork, or tomato and egg, but oil-seared shows off the wide, chewy, and tender flour noodles best. It’s a typical preparation in the northern Shaanxi Province (capital, Xi’an), where a simple red-pepper topping provides comfort during cold winter days.
