Beginning November 19th, Tilth Restaurant chef Maria Hines will start opening her doors on Monday nights, offering prix fixe dinners that feature local producers and food that’s not available on the regular menu ($45, plus $20 for wine parings).In addition, Hines is starting an Organic Panel Dinner series. She’s gathered a good roster of farmers, sustainability experts, chefs, and local food mavens to discuss topics in organic eating over dinner ($80, including wine).Organic Panel Dinners begin November 5th, with Hines moderating “Organics and Sustainability 101,” a panel featuring Gerry Warren of Slow Food, George Vojkovich of Skagit River Ranch, and Tamara Murphy of Brasa.
