Today, she shares one of her favorite ways to enjoy grilled salmon. “Sarcasm Served Daily”, is the sign that’ll greet you at King Donuts, but when Hay is not serving up sass and sweets from behind the counter, she treats herself to something spicy at home. In her case, the grilled salmon plus an apple fritter a day keep the doctor away. Grilled Salmon with Tomatoes and JalepenosServes 41 ½ lbs fresh salmon fillets2 Tablespoons of your favorite salmon or fish seasoning (optional) ¼ cup chopped cilantro1 teaspoon minced ginger1 ½ teaspoon minced garlic2-3 Roma tomatoes, diced3 ouces of jarred jalapeno, can adjust to tasteSalmon
Sprinkle salmon with the salmon or fish seasoning, or if without, substitute with salt and pepper. Wrap the salmon in foil and place on the grill for 8 to 10 minutes, flipping the package halfway through. Tomatoes and Jalapenos Place tomatoes in a saute pan over medium heat. Add garlic, ginger, jalapenos, and 2 tablespoons of the jalapeno juice. Sautee the mixture until warmed through. Take off the heat and mix in chopped cilantro. To serve: Place salmon on a plate and serve with a squeeze of lemon juice. Top with the sauteed tomatoes and jalapenos. Serve, with a donut for dessert.
